Cumin Scented White Beans
Yikes, I almost forgot... this is the Cumin Scented White Bean recipe that I promised! I served them with my Simply Seared Tuna w/ Triple Herb Sauce. They literally take all of ten minutes to throw together!
Whenever I use beans from a can (which is most of the time), I always rinse them under cold water water after I drain them. This actually washes off about 60% of the extra sodium that canned goods tend to have. Then if you feel you're beans need a little extra salt, you can add it in yourself!
Cumin Scented White Beans
Ingredients
2 – 15oz cans of white beans2 cloves garlic, sliced
2 tbsp of cumin
½ cup of veggie or chicken broth
¼ cup sliced scallions
Handful of chopped cilantro
1 teaspoon of extra virgin olive oil
Directions
Heat olive oil in a medium pot over medium high heat. Add garlic and sauté until fragrant.
Stir in cumin, allow to heat for 30 seconds or so, before adding broth and beans. Combine well and allow everything to heat through. Season with salt and pepper.
Stir in scallions and fresh cilantro just before serving!
Serves 4.

Hi Dani, the photo isn't showing up right now, all I can see is some code! This recipe sounds great since I love cumin and beans! And I especially love simple, quick recipes like this! I always rinse my canned beans too but didn't know the sodium statistic, good to know!
