Simple Steak Supper
I like steak, I really do, but it is definitely not my strongest area of culinary knowledge. When it comes to making any type of steak at home I usually keep it pretty simple. A little salt. A little pepper. And then I hand it off to B (my husband) to throw on the grill.
I am really posting this recipe just to throw out another clean, simple, and d'lishes dinner idea. Lean cuts of beef can be a great addition to a healthy diet. If you can afford to, I highly recommend that you make an effort to buy grass fed and finished organic beef. It is definitely more expensive (it can be double or triple the price of grain fed non organic) but the benefits are so worth it.
When you buy beef that is grass fed and finished it is not only leaner but the fat that it does have is much healthier. You see, when cattle is grass fed it is raised eating natural rich plant sources that are packed with omega-3 essential fatty acids (the fats that work with us), so when we consume this type of meat we are getting a lean protein that has healthy fats.
On the flip side, when the cattle is grain fed (if the meat is not labeled you can assume that this is the case) the fat is much more detrimental because it is saturated (the fats that work against us) and that's what we end up consuming.
I know that all of the information out there can get pretty over-freakin'-whelming. Organic or not organic? Grass fed or grain fed? Eat meat, don't eat meat? The list goes on....
I am a big believer that we have to pick and choose our battles in the world of healthy eating... if you are trying to change your habits, take on one battle at a time. First, try to get a leaner cut when it comes to meat. Next, consider whether or not buying organic beef is in your budget, and then if you're still game decide if grass-fed and organic is honestly a feasible choice.
The bottom line is this, we just have to do the best we can most of the time.
If those of us that can afford to buy the organic grass fed beef do, eventually prices will drop as demand rises and more and more of us will be able to fit it into our budgets. If this is not an option for your budget right now, don't sweat it. Remember, there is no one food or meal that is going to make or break good health, make the best choices you can, enjoy, and laugh... I promise all of these will keep you feeling A-okay!!
By the way, I served this over a bed of arugula that was tossed with a squish of lemon and a drizzle of olive oil right along side some braised red cabbage and apples topped with goat cheese...SO GOOD!

Kacee :
Hey Dani! Just a little FYI - I know a lot of people when it comes to marinating a steak like to do so with different seasonings including salt. However, salt really shouldn't be applied to a steak until just prior to cooking it. Salt absorbs moisture including juices in a steak.
A nice seasoning I've been using lately in my marinades is lemon pepper. It really gives it a nice flavor.:)

Anticiplate - Ha...good question. It was a small New york steak that my husband and I split...about ten ounces or so.

Yeah I am with you...I have no clue how to cook a steak really. I was a vegetarian for five years and so missed out on some integral teaching seminars on meat preparation I do believe...I am less afraid to mess up chicken than fish or steak...
That sure does look good though...hmmm where can I find a man to barbeque something for me STAT?
Good tip about the salt above...I had no clue... but that makes sense from an osmosis perspective.

Isn't it amazing how far a little salt n' pep will go? We really like Montreal Steak Spice (go figure...it tastes good on...steak?!) I always want to go all out and do lots of spices and marinades and stuff, but really the tastiest steak is simple. A little steak spice or some s & p....mmmm! Give me steak anyday :)

We are on the organic beef kick in our house so we try to use it in all our recipes. It is easy to get as Costco carries it all over the country.
