Oatmeal Parfait
Hot, fluffy oats... warm bananas and maple syrup... sliced strawberries... creamy yogurt and cottage cheese... crunchy walnuts... I mean, c'mon, do I really need to explain why I have been so obsessed with my morning Oatmeal Parfait?
Yep. You know my type. I'm one of these "when I find something I really like I eat it every day until I reach the point where I can't even look at it any more" kinda girls.

I have been in love with this concoction. No, scratch that, more like obsessed lately.
It's like dessert (in a good way) but for breakfast. And it's a great way to balance out a big bowl of oatmeal with some protein and healthy fat so you're not just sitting down to a carb-fest (because although it may work for some, the carb-fest doesn't really work for me... I feel much better when I am able to balance out my meals).
The key to a rich, creamy, fluffy bowl of microwaved oatmeal is hands down EGG WHITES. The egg whites make the oats fluffy and light, just the way I like them. You just want to be sure not to do too many egg whites because then you will end up with a bowl of oatmeal with scrambled egg whites, rather then the deliciousness that I am referring to!
At first I was unsure about the hot oatmeal topped with the cool yogurt/cottage cheese combo, but I (obviously) decided that I'm a fan. I like to start at the top, and scoop straight down so I get a taste of each layer with every bite!

Oatmeal Parfait
Ingredients
1/3 cup dry rolled oats2/3 cup water
¼ cup egg whites
¼ banana
1 tsp maple syrup
½ cup sliced strawberries
¼ cup low fat cottage cheese
¼ cup no-fat greek yogurt
A few dashes of cinnamon
1 tsp of chopped walnuts (3 walnut halves)
Directions
In a small bowl combine cottage cheese and yogurt along with a few dashes of cinnamon. Set aside.Combine oats, water and egg whites in a glass dish and pop in the microwave for one and a half to two minutes (this will vary depending on your microwave). Stir halfway through to ensure that you end up with a custard-like oatmeal and NOT scrambled egg whites!
Stir banana, maple syrup, and a few more dashes of cinnamon into your oats. Layer sliced strawberries over the oats and top with yogurt/cottage cheese mixture.
Sprinkle your walnuts over the top and enjoy!!

Nice one, Dani. I have been eating my oats with cottage cheese nestled into the same bowl for a few years now, and still love it!
One of my favorite ways to eat oats is to cook them in chai (Indian-style tea). I just make chai as usual (boil spices and tea in water and milk of choice until creamy) and then add the oats. Toss this in a bowl with cottage cheese and maybe some mango in the summer, or apples in the winter. Love it!
If you really have some time to spare, you can always toast your oats first for some added depth of flavor. Yum!

Egg whites in oatmeal? Never heard of doing this before - it's going on my list right now. I have granola that has oats in it every morning. I'm the same way with becoming obsessed with one thing and sticking to it until I just can't take anymore, especially with breakfast. Right now it's granola, fruit and yogurt.

Dear Dani,
In your previous video about oatmeal I said I had a cereal with puufed oats
well I tried that instead ofthe hot oatmeal and changed the cereal to original instead of honey and it tasted delicious
The cereal is kind of crunchy so it gave a good extra kick to the parfait

I've recently been microwaving apples and berries with cinnamon and a touch of lemon juice, and putting whole wheat flakes, cacao nibs, and cottage cheese on top-a little weird, but so yummy!

I'm not gonna lie, the egg whites with oatmeal made me a little squeamish... but while taking the risk and going for it I was on the phone with my husband while putting it all together and I was explaining to him what I was making, after my first bite I stopped him mid sentence and said OMG!!! this is freaking fabulous, actually HEAVENLY!!!! He wants it for dinner tonight and I will be helping myself to another yummy helping - I love your site - thanks so much!!!!!!!!!!

I just found your site a few weeks ago and I have to say it is great!!! I tried the Oatmeal parfait last week and I am addicted. It is so good. I love cottage cheese and yogurt mixed with fruit but this combo is delish.

I tried this today. I didn't have cottage cheese & substituted blueberries for strawberries, not to mention that most of the oatmeal ended up all over my microwave & bowl (note to self...2 min too long ;), but it was really good! Will be making this again! Thanks Dani! :)

Hmmm egg whites you say?? I'll have to try that! I usually have this type of breakfast at least 3 days a week actually! I typically just make my oatmeal, while cooking I'll add a combination of frozen blueberries/strawberries/blackberries/raspberries and then continue cooking, then add some skim milk, yogurt, and almond slices. SO delicious. Literally the only breakfast food that doesn't make me hungry an hour later! Thanks Dani. p.s. congrats on your little one!!
