Bright Green Oats

Bright Green Oats
Don't ask me why, but the idea of starting the day with a handful of greens mixed into my breakfast makes me really excited.  Not to mention looking down into this colorful bowl seems to be another "feel good" way to start the day... it just looks happy.  It's like my breakfast bowl is smiling at me...

A little strange?  Perhaps.

But true none-the-less.

Now let me begin by saying that I can not take the credit for blending spinach into my morning oats.  This bright green bowl of oats was inspired by Polly over at Yoga is Yummy.  I recently discovered Polly's blog and have already bookmarked a handful of her simple recipes that I would like to try.  If you guys like my clean, simple, and d'lishes style in the kitchen then you are definitely going to want to check out Polly's Recipe Page.

I used my standard recipe for some quick microwaved oats (which I demonstrate in my Oats "101" video)
and then, using a hand blender, mixed in the spinach... pretty easy!  And I have to tell you, you can't even taste the spinach... you seriously don't even know it's in there.  It's basically the same concept as adding a few greens into a fruit smoothie, the color changes a bit, but as long as you don't get too carried away with the amount of greens you use, you'll  never know they were in there.  You could really use this little technique with any bowl of hot breakfast cereal.

Do you guys have any good tips or tricks when it comes to getting some greens into your morning meals?  I would love to have a few more ideas in my back pocket!!

Bright Green Oats

Ingredients

1/3 cup rolled oats
2/3 cup water
3 tbsp egg whites
Pinch of salt
Handful of baby spinach
1 tsp of maple syrup

Directions


Place oats, water, egg whites, and salt in a big microwave-safe bowl and pop in the microwave for one minute.  Give it a good stir and pop it back in the microwave for another minute or so OR until your oats are fluffy and cooked through.

Toss the spinach into the oats and blend with a hand blender until all of the spinach is broken down and you have a brilliantly beautiful, bowl of green oats.

Stir in the maple syrup and top with your favorite fruit and/ or nuts.  Enjoy!

Serves 1.

That's a great idea! I made a smoothie with kale this morning, but I've never thought to put greens into oatmeal. I'll definitely try this out.

I usually mix some spinach or broccoli or swiss chard left over from dinners into scrambled egg whites the next morning!

Annie - Yum! Love the idea of greens scrambled into eggs. Now if I could just practice some restrain and actually have leftovers;).

I love greens in my oats but I eat them savory. I don't even bother blending mine (though yours do look gorgeous). I also add egg whites, spinach, and a sprinkle of parm cheese. This makes a great dinner for one!

I LOVE IT!!! My husband often works nights and I have to make dinner for two picky girls (ages 3 and 4). I don't want to spend a lot of time on a dinner that I'm going to have to sit and listen to them complain about, so I like things that are quick, yet still nutritional. I called it Leprechaun Oatmeal - they ate it up and asked for seconds! Thank you!!!!

Dani - what a cool idea! I eat oats like crazy, and I can't imagine how I overlooked this idea. See? One more reason to frequent your blog!
I live on banana spinach smoothies. I have one almost every morning, and sometimes pre-workout too. Also, I often will just dump a few cups of raw spinach into whatever I am making just as it finishes cooking for some extra green.
Hope that baby comes soon.. can't wait!

Hi! This looks really good. I wanted to let you know I found it, because I was looking for some healthy vegan recipes. I clicked on this one, but it has egg whites in it, which are not vegan. Just wanted to let you know you should probably update your tags.

I made the green oatmeal this morning and it was so good! I made it a little differently as I blended the spinach and water in the blender and then used that liquid to cook the oats. Had it with blueberries and banana. Yum!

I've been wanting a hand mixer, but I finally bought one after reading this post. I got my mixer and I'm trying the green oatmeal tomorrow!
