Quick and Simple Lentils with Dandelion Greens
Have you guys tried the pre-cooked, vacuum packed, lentils from Trader Joe's?

They are super simple, really convenient and quite tasty!

If you don't have a Trader Joe's near by AND don't have the time or desire to make some lentils from scratch you could easily use a few cans of lentil soup for this recipe (just be sure to reduce or omit the added broth if using cans of soup because you won't need the extra liquid).

Because the lentils are pre-cooked this recipe comes together in no time yet it tastes like a recipe that has simmered for hours. It is a good-hearty-cold-weather-feel-good-food! And although I'm not a big fan of making things over and over again, I would definitely whip this guy up again.

Okay, enough about the recipe... let's get to the "and why I've been MIA" part! You have to forgive me. I was doing some behind the scenes upgrades to the blog (okay, let me clarify that... my wonderful 'right-hand-man-web-tech-guy" was doing the upgrades - I know nothing about web tech details!) and ran into a few gliches that prevented me from posting over the last couple weeks! You may notice a few things that are out of whack over the next few days, but all should be resolved soon enough! It's kind of a bummer because I shot a video for a yummy Super Bowl recipe that I never got to share, but I will put it up anyway in the next few days (better late then never, right?!).

Let's see, what else can I tell you. Oh, yeah... I'm just about to hit six months and let me tell you guys, my belly has begun to bloom like a tulip in the sun after a rainy day. I think I may have to post some pictures in FFT one of these days.

And by the way... I decided to find out the sex of the baby! I kind of knew I would. I'm a "likes-to-be-in-the-know-kind-of-girl". SO, what do you think it is?? I could tell you now but that would be no fun. I think I'll keep you guessing until my next post;).

Quick and Simple Lentils with Dandelion Greens

Ingredients

2 ½ cups of pre-cooked lentils (I used one package of Trader Joes’s pre-cooked lentils)
3 sliced scallions
1 carrot, diced
3 cloves of garlic, diced
1 sprig of thyme
1 bunch of dandelions greens, stemmed
¼ cup low sodium chicken broth
1 tsp of minced shallots
2 tablespoons of sherry vinegar
1 tablespoons of extra virgin olive oil
Salt and pepper

Directions

Lightly coat the bottom of a pan with extra virgin olive oil. Add scallions, carrot, garlic, and saute about three minutes or until fragrant..

Add greens along with some salt and pepper and sauté another three minutes. Add lentils, herbs, and chicken broth and cook until heated through.

Combine shallots, vinegar, and oil and add to the lentils. Simmer for another five minutes. Season with salt and pepper and enjoy!

Serves 6.

So excited to find out what you are having!!! So, I haven't seen any chocolate covered pickles posted - are you having any crazy cravings?

I love lentils! I must try this although it will be a hard sell for my family :( I have a more adventurous way of eating, but it doesn't always work for everyone so there's a bit of compromise. That's okay!

BTW, my intuition says you're having a girl. Am I right?

I must remember this because I have had a hard time cooking lentils well. I know that sounds silly, but cooking dried beans and me just do not get along:)

I also have been having problems with my blog, and now I am not going to post until I get a new blogging platform. So, I will be a wordpress gal within the week:)

Oh, and I think that your baby is a boy.

Hey Dani, thanks for another great idea! I've never tried the Trader Joes lentils, but I'll be on the lookout next time I'm in the store. Have you ever tried Eden branded lentils too? I feel like they could work in this also.

Culinarywannabe - Ya know, no specific cravings believe it or not... although I have been LOVING cottage cheese with strawberries and grape nuts (weird, I know!).

Cyndi - It's definitely worth a shot, your family might surprise you. And yep. You're right.

Ameet - I have tried Edens and I think you are right... they would probably work really well.
