Quinoa with Oranges and Yogurt
Here's another great way to sneak some Quinoa into your diet... top it with some fruit and yogurt.
Once again guys, this is a meal you could make a million different ways!
I'm gonna keep this post short because February is almost over and I still have a few more Quinoa recipes I want to sneak in... so I've gotta get cookin'!!
Quinoa with Oranges and Yogurt
Ingredients
1/2 cup of cooked Quinoa1/4 cup of Greek-style yogurt
1 orange, cut into chunks
1 tbsp walnuts
2 tsp of honey
Directions
Place quinoa in a bowl and top with yogurt, oranges, and walnuts. Drizzle with honey and enjoy!
Serves 1.

I recently tried something similar. The quinoa goes well with fruit and yogurt.

I couldn't take it anymore and bought a big box of whole grain organic quinoa tonight! But I need your help! I want to make a yummy, fairly quick meal for dinner tomorrow night. Lying around, I also have shallots and a giant portabella mushroom. Any ideas for a recipe? Everything you post sounds so good, so I hope you can give me some tips! Thanks!!

Ashley - I LOVE IT!! I finally broke you down with just one day left in the month:)!
Hmmmm...With the ingredients you have on hand the first thing that pops in mind are some stuffed portabella mushroom caps. Simply grill or roast your mushrooms then on the stove top saute some shallots, onions, along with....well, whatever you like...maybe a some veggies or ground turkey...hit with some of your favorite seasonings.
You could go Italian style and do turkey, peppers, some canned, a little parmesan cheese, add the cooked quinoa and then stuff it all in your mushroom cap. OR maybe take the garlic and shallots and add some black beans, lite coconut milk, red peppers, cilantro, and curry powder add the cooked quinoa and stuff!
The possibilities are endless...I can't wait to hear what you do!!
