Peanut Noodles w/ Shredded Chicken - VIDEO
This dish is too good to be so easy, and the truth is, there really isn't any cooking involved (other than cooking up your soba noodles...but does that really count?).
It's more of an assembly than anything else, all you have to do is mix and serve. But be sure not to skimp out on the garnish, the salty peanuts combined with the spice of the red pepper and the cilantro is unbeatable!!
Peanut Noodles w/ Shredded Chicken - VIDEO
Ingredients
- 8-10 oz. of Soba noodles
- 3 scallions, sliced
- 1 red pepper, sliced into strips
- 1 tbsp. toasted sesame oil
- 1/4 cup low sodium soy sauce
- 1/4 cup of natural peanut butter
- 2 tbsp of rice vinegar
- 2 tsp of honey
- 2 tsp of grated ginger
- 2 cups of pre-cooked shredded chicken
- Garnish: salted peanuts, red pepper flakes, and cilantro.
Serves 6.
Directions
Cook Soba noodles according to package. Drain and rinse under cold water.
In a large bowl, combine sesame oil, peanut butter, rice vinegar, honey, and ginger. Whisk together.
Add noodles into peanut sauce along with the chicken, scallions, and peppers. Gently combine all of the ingredients until everything is evenly coated in the peanut sauce.
Plate it up and top with red pepper flakes, peanuts, and cilantro...Enjoy!!
