Penne with Salmon & Greens - VIDEO
I'm a huge fan of dark greens...afterall, they are considered a power food, so what's not to love?
If you aren't familiar with the variety of dark, leafy, greens that are out there, this QuickBite is a great way to introduce them into your kitchen. This recipe calls for Dandelion greens, but you could easily substitute kale, swisschard, or even spinach.
Penne with Salmon & Greens - VIDEO
Ingredients
- 1/2 lb poached salmon, broken into bite sized pieces
- 1 bunch of dandelion greens, stemmed and chopped
- 1/3 cup of dill, chopped
- 5 cloves of garlic, chopped
- 2 leeks, chopped
- 14 oz. can of diced tomatoes
- Pint ofcherry tomatoes, halved
- 1/4 cup veggie broth
- 1 tbsp. extra virgin olive oil
- ½ lb of whole wheat pasta
- 1/4 cup of reserved pasta water
- Fresh grated parmesan cheese
- Salt & pepper
Directions
Cook pasta according to package. Be sure to reserve 1/4 cup of the pasta water.
Heat olive oil in a large sauté pan over med heat. Add leeks and a pinch of salt and sauté 3-4 minutes or until leeks begin to become tender.
Stir in the garlic and saute for another 2 minutes. Add greens and broth along with another hit of salt and pepper. Cover and cook for 5 minutes or until greens are wilted down and tender.
Stir in dill, salmon, and tomatoes. Cook for another 2-3 minutes.
Stir in pasta with 1/4 cup of reserved pasta water. Top with grated parmesan cheese.

This would have to be one of the best recipes I have seen in ages. Salmon is such a "superfood'- combined with wholewheat pasta, tomatoes, and loads of greens - you cannot go wrong! YUM!!!
