20 Minute Turkey Chili
When I lived back in Jersey, my friends and I would rent a house in Vermont every New Year's. We would spend the whole week skiing, playing games, singing, and ofcourse, cooking! We would make a big pot of chili and just leave it bubbling on the stove, so we could dip into it whenever we wanted!!
Turkey chili is a great way to please a crowd for the SuperBowl as well! Just whip up a big pot and set up a topping bar so your guests can dip in as they please!!
Ingredients
- 1 onion, chopped
- 4 cloves of garlic, chopped
- 2 bell peppers, one green and one red, chopped
- ½ jalapeno, chopped
- 2 tsp. of ground cumin
- 1 tbsp. chili powder
- 15 oz cans of kidney beans
- 15oz. can of pinto beans
- 1-½ cups of chicken broth
- 28oz. can of diced tomatoes
- 1 lb. extra lean ground turkey
- 1 tbsp. extra virgin olive oil Toppings (optional): cheese, yogurt, scallions,
Directions
1. Heat oil in a big pot over medium heat. Add onions and jalapeno and cook for 3 minutes. 2. Stir in garlic and peppers, sauté 4 minutes or until peppers start to become tender. 3. Stir in turkey and break up with fork, cook another 5 minutes until turkey is browned. Stir in cumin and chili powder. 4. Add beans, tomatoes, chicken broth, and salt and pepper. Bring heat to medium high and allow to boil. Once chili reaches a boil, reduce heat and simmer for 5-10 minutes. Enjoy!!

Nice recipe! It's great to see a healthy version of chili without compromising flavor. If you can leave it on for more than 20 minutes, I'm sure it only gets better!

This chili is ready to go in 20 minutes, but if you have the time, you can certainly leave it simmering on the stove longer!
