Grilled Portabella Burger - VIDEO
Portabella mushrooms are surprisingly hearty and satisfying!
I wouldn't think that a mushroom could have so much "sticking" power that it would actually serve as a meal, but the portabella mushroom definetely does!
I mean really, who would ever think that a big fat mushroom could be so good?! They're hearty and satisying...right up my alley:).
Grilled Portabella Burger - VIDEO
Ingredients
- 2 round rolls
- 1 clove of garlic
- 2 tablespoons of extra virgin olive oil
- 2 Portabella mushroom caps, wiped down with a damp towel
- 2 oz. of goat cheese
- 1/2 red onion sliced thick
- 1/2 cup of jarred roasted red peppers
- A couple of handfuls of arugula
- 2 tbsp. of balsamic vinegar
- 2 tsp. of oregano
- Salt and pepper to taste
Serves 2.
Directions
Season both sides of the mushrooms and onions with extra virgin olive oil, balsamic vinegar, oregano, salt and pepper.
Heat grill pan over medium high heat. Place the mushrooms and onions on the pan and grill for 3-5 minutes on each side or until the veggies are tender.
In the meantime, drizzle rolls with extra virgin olive oil and toast under the broiler for 2 minutes (watch them closely they toast fast!).
Remove toasted rolls and rub generously with garlic clove. On the bottom half of the roll, layer arugula, onions, mushrooms, peppers and another handful of arugula. On the top half of the roll spread the goat cheese. Pop the top on and enjoy!!

Courtney - One of my favorite ways to have a vegetarian dinner is to make a few of my favorite veggies side dish and have a veggie pupu platter!

I didn't think my hubby (a meat & potatoes kind of guy) would like it but he loved it... This recipe is surprisingly filling. I used baby spinach in place of the arugula (not a big fan of arugula) I will be making this again soon!!!
