Caesar Salad (dani d. style) - VIDEO
With all the eating I did over the long Thanksgiving weekend I'm ready to lighten things up a bit.
This salad is the perfect meal... fresh, crunchy and YUMMY!
Caesar Salad (dani d. style) - VIDEO
Ingredients
3 hearts of romaine, chopped2 small fennel bulbs, thinly sliced
1 pint cherry tomatoes, halved
3 cloves of crushed garlic
4 anchovies, minced
5 capers, minced
1 shallot, minced
Juice of ½ a lemon (1 tbsp.)
1 tsp. Dijon mustard
¼ cup plain, non-fat yogurt
2 tbsp. extra virgin olive oil
¼ cup fresh grated parmesan cheese
Salt and pepper to taste
Serves 4.
Directions
Dressing
Combine garlic, anchovies, capers, shallot, lemon, Dijon mustard, yogurt, salt and pepper in a small bowl.
Slowly whisk in olive oil. Adjust seasonings and set aside.
*This makes ½ a cup. You may not use all of the dressing.
Salad
Combine romaine and fennel in a large bowl.
Add a couple tablespoons of dressing and toss. Continue to add dressing to your liking and toss well.
Toss in cherry tomatoes and sprinkle parmesan cheese on top…Enjoy!
