Kalyn's Zucchini & Sausage Kebabs - Video

Is it just me, or does Summer making cooking oh so easy?!  Salads, salsas, and grilled foods are some of the easiest and tastiest ways to "cook" you're way through summer. 

This recipe was inspired by a blog that I often read, Kalyn's Kitchen. 

Kalyn lost over 40lbs. on the South Beach Diet and her blog is loaded with tons of fresh, healthy, delicious, recipes. When I saw her recipe for Zucchini and Sausage Kebabs, I thought to myself, "Now that's a QuickBite if I've ever seen one".

These kebabs couldn't be any easier. It's more of an act of assembly than it is cooking. I decided to use a balsamic dressing for the marinade and added a little garlic powder as well because... well, because I add garlic to just about everything I make.

I must admit though, usually when it comes to grilling around here, my husband takes the reigns. It's not that I don't like to grill, because I do, it's just that it seems to be the one arena of cooking that excites him, so I figure who am I to get in the way of a man and his grill. Now on the flip side, if I'm indoors using a grill pan (like I do in the video) then the pleasure is all mine.

Either way, indoors or outdoors, these kebabs work well. They're clean, simple, and d'lishes.

 

Kalyn's Zucchini & Sausage Kebabs - Video

Ingredients

1 red pepper, cut into 2-inch chunks
1 zucchini cut into 1-inch half moons
1 onion, cut into wedges
2- 3 links of pre-cooked turkey sausage, cut into hearty, bite size pieces (depends on the size and the brand)
¼ cup of light balsamic dressing
½ tsp garlic powder
Salt and pepper to taste

Directions

Note: if using wooden skewers, be sure to soak for 30 minutes in water before grilling.

Alternate zucchini, onion, sausage, and red pepper on a skewer.  Each skewer should have 3 pieces of sausage.

Brush each skewer with balsamic dressing then season with salt, pepper, and garlic powder.

Heat grill or grill pan over medium-high heat.  Cook skewers for about 15-20 minutes.   Rotate and brush with a little more balsamic dressing a few times throughout the cooking process.  Enjoy!

Makes four Kebabs (2 hearty servings).
