Mediterranean Cod Pouches - Video
These Mediterranean Cod Pouches are the best of all worlds... they're quick, simple, AND there's practically NO clean up involved!! Now what could be better than that?
Okay, maybe having a personal chef make the meal for you... but come to think of it that really wouldn't be better because cooking is the fun part and then you wouldn't get to have any fun!
Oh wait, duh... I've got it... so simple. A housekeeper! That's all. This way you can keep on cooking and having fun but you wouldn't have to worry about the "sink full of dishes" part. Ahh yes, that would be perfect, wouldn't it? But you know what I say, "perfect is boring!!"
Anyway, this really is a very simple cooking method so don't be scared to change up the flavors. Enjoy!
Mediterranean Cod Pouches - Video
Ingredients
2 - 6 oz fillets of cod2 tbsp chopped Kalamata olives
2 tbsp chopped green olives
2 handfuls of green beans (about 4 oz.), trimmed
1 clove of garlic, chopped
¾ cup of cherry tomatoes, halved
1 tsp of lemon zest
½ a lemon, sliced
¼ cup chopped parsley
A little extra virgin olive oil
Salt and pepper to taste
Directions
Preheat oven to 400.
Combine olives, garlic, tomatoes, lemon zest and parsley in a small bowl. Drizzle with a teaspoon of extra virgin olive and season with salt and pepper.
Lay out two pieces of foil. Place a single layer of green beans on the bottom. Top with ½ of the tomato mixture followed by the cod fillet.
Drizzle cod with a tsp of olive oil and season with salt and pepper. Top each fillet with two slices of lemon.
Pull sides of foil up and fold over to seal. Pull sides in and seal as well. Pop in the oven for 25-30 minutes or until cod is cooked thru.
Serves 2.

It is indeed a great dish because it's fast,simple and clean.
Yet i do not understand why you unpack it. I just put the pouches in front of the client and they are always very curious and surprised. After all it is like a little present with smoke coming out if you open it.

Iman - Nope...you could use just about any fish you want...you may have to adjust cooking times a bit depending on the thickness of the fish though.
