No-Bake Sweet Potato Pie - Video

Last year I made a NO-Bake Apple Pie that I loved so much I really wanted to come up with some more "No-Bake" Pie ideas.

I mean basically I just pick a pie, think of all of the flavors and ingredients that go into it and then SIMPLIFY!!

Now don't get me wrong, I LOVE to bake... but when a sweet tooth rolls in at 6 O'clock on a Tuesday night I am not about to bake myself a pie, if ya know what I mean?! It's just not happening.

This is exactly where a no-bake pie is perfect! It gives me all of the flavors and textures of the real deal with HALF THE HASSLE, IN HALF THE TIME! I love it!

Two sweet potatoes will give you about four servings and I find that whatever is leftover from dessert makes a great breakfast the next morning!!

I haven't tried it yet, but I bet it would be pretty dang tasty mixed into some pancake batter as well!!

And remember, if you need a refresher on how to handle a sweet potato, be sure to check out my "Sweet Potato 101" video.

Ingredients

2 sweet potatoes, peeled and chopped
2 tbsp. of earth balance
¼ cup of maple syrup
2 tsp of cinnamon
1/3 tsp. of nutmeg
A pinch of salt
½ cup of grape nuts
¼ cup of pecans, chopped

Directions

Steam sweet potatoes for eight to ten minutes or until nice and tender.

While you’re potatoes are steaming combine one tsp of cinnamon with the grape nuts and chopped pecans.  This will be you’re topping!

Once the sweet potatoes are done cooking, transfer them to a large bowl and using a big fork to begin mashing.  Keep on mashing until most of the big chunks are gone.

Add in the butter, syrup, and the rest of the cinnamon, nutmeg, and salt.  Mix until everything is well combined (… take a taste… smile!).

Scoop about ¾ cup of sweet potato pie filling into a serving bowl and top with a couple of teaspoons of the grape nut mixture and a dollop of whipped cream… enjoy!

Serves 4.

oh, dani...you did it again--yummy yams!
It's a gray day, and I'm exhausted from flying around the country and having a grand old time, So I checked my email and there you were with ANOTHER great video with your upbeat style!
Thanks for being here in cyberspace. It feels like you're right here with me cheering me on.

Jeanie - It sounds like you could use a little NO-Bake Sweet Potato Pie:)! If I could, I would make some for you!!

Yolanda :

Hey Dani! I just tried this recipe but with mucho substitutions, and it was soo deelicioius. I had leftover butternut squash so I used that instead, I had no maple syrup, so I went with a agave, and I had no grapenuts so I used some Kashi granola and it still came out so yummy. Thanks for an awesome, healthy recipe!! You rock!:):)

Yolanda - I'm so happy you subbed in your own ingredients!! After all, a recipe is really just a guideline...it's an idea for you to take and make your own!!
