Turkey Quesadilla - Video

I'm headed out of town and won't be making any Post-Thanksgiving leftover meals this year so I pulled this one from the archives. It's a yummy way to create a completely different meal using your Turkey Day leftovers!

I like topping it with some left over Cranberry Sauce!

Turkey Quesadilla - Video

Ingredients

2 whole wheat tortillas (I used La Tortilla Factory low-carb)
1/2 cups of light shredded pepper jack cheese
1/2 cup of cooked turkey, cut into bite sized chunks
1/4 cup of pinto beans
1 jalapeno, thinly sliced
½ green apple, thinly sliced
½ tsp thyme

Makes 2 Quesadillas.

Directions

Heat tortilla in a dry pan over medium heat and flip it over a few times until it is warmed through.

Sprinkle two tbsp of cheese over the entire tortilla. On ½ of the tortilla add 1/4 cup of turkey, two tbsp of pinto beans, a few jalapeno slices and three slices of apple (you'll love it!). Sprinkle with ¼ tsp of dried thyme and top with another two tbsp of cheese.

Fold the tortilla over to make a half moon. Press the top down with a spatula and flip it over.

Cook until the cheese is melted and the tortilla is heated through. Allow a few minutes for the Quesadilla to cool down before slicing.

Top with some left-over cranberry sauce & enjoy!
