Great Greek Salad - VIDEO
In my on going attempts to avoid a hot stove as much as possible during these summer months, I continue to share my personal take on refreshing salads from around the world.
I like this version of the Greek Salad so much, I just had to call it great! Give it a try and let me know what you think.
Great Greek Salad - VIDEO
Ingredients

Salad
- 2 hearts of romaine, chopped
- 1 bell pepper (any color will do), chopped
- 1/4 red onion, thinly sliced
- 1/2 can (7 ounces) of chickpeas (garbanzo beans)
- Handful of pepperocinis
- 1/4 cup of kalamata olives
- Handful of cherry tomatoes, halved
- 1/2 cucumber, chopped into quarter moons
- 1/2 cup feta cheese, crumbled
- 1 tsp. dried oregano
- 1 garlic clove, minced
- Juice of 1/2 a lemon
- 1 tsp. dried oregano
- 5 tbsp. extra virgin olive oil
- Salt and pepper to taste

Dressing
Combine your minced garlic with one tsp. of oregano and lemon juice.
Slowly whisk in your olive oil. Season with salt and pepper and set aside.
Salad
Once all of the ingredients are prepped, we just have to assemble!!
Layer a bed of romaine in your serving dish followed by your bell peppers, red onions, cucumbers, cherry tomatoes, chickpeas, kalamata olives, feta cheese and pepperoncinis.
Sprinkle with remaining tsp. of oregano.
Drizzle your dressing over the top. Enjoy!!
