Red Cabbage Salad

Red Cabbage Salad

When I was growing up we always had red cabbage in the fridge.  We didn't get too experimental with it, it was pretty much used as a staple in our "green salad".  That green salad made it to the table almost every night of the week and it was one of the only things that my sister and I were allowed to make (since there was no cooking involved).

Now don't get this salad confused for slaw. It's not slaw... it's heartier, crunchier, and has a lot more flavors and textures going on!

I love eating red cabbage raw. As you may know by now, I'm a huge texture girl and let me tell you, "Red cabbage does not dissapoint in the texture department". The combination of the cabbage, apples, and walnuts is a texture explosion... a rather delicious combination if I do say so myself!

I served this along with some grilled Soy Chicken Thighs!

Red Cabbage Salad

Ingredients

½ head a medium red cabbage
2-3 stalks of celery, sliced
½ red onion, thinly sliced into half moons
2 apples, cut into small chunks (I used one red and one green)
¼ cup of golden raisins
¼ cup of toasted walnuts
¼ cup of chopped dill
¼ cup of lemon juice
2 tbsp of olive oil
1 tsp of Dijon mustard
1 tsp garlic powder
Salt and pepper to taste

Directions

Combine lemon juice, olive oil, mustard, garlic powder, and salt and pepper in a small bowl.  Give it a quick whisk and set aside.

In a large bowl combine cabbage, celery, onion, apples, raisins, and dill.  Top with dressing and combine well.

Season with salt and pepper and sprinkle with walnuts… Enjoy!

Serves 6 as a side.
