Grilled Portabella Burger
Portabella mushrooms are surprisingly hearty and satisfying. You might not think that a mushroom would have enough sticking power to cut it as a meal, but I must say, the Portabella mushrooms certainly do. These burgers are a nice change from your everyday meaty burgers, and I find that they do a great job at satisfying both my vegetarian and meat-eating friends!
Ingredients
- 2 round rolls
- 1 clove of garlic
- 2 tablespoons of extra virgin olive oil
- 2 Portabella mushroom caps, wiped down with a damp towel
- 2 oz. of goat cheese
- 1/2 red onion sliced thick
- 1/2 cup of jarred roasted red peppers
- A couple of handfuls of arugula
- 2 tbsp. of balsamic vinegar
- 2 tsp. of oregano
- Salt and pepper to taste
Directions
1. Season both sides of mushrooms and onions with extra virgin olive oil, balsamic vinegar, oregano and salt and pepper. 2. Heat grill pan over medium high heat. Place mushrooms and onions on the pan and grill for 3-5 minutes on each side or until veggies are tender. 3. In the meantime, drizzle rolls with extra virgin olive oil and toast under the broiler for 2 minutes (watch them closely they toast fast!). Remove toasted rolls and rub generously with garlic clove. 4. On the bottom half of the roll, layer arugula, onions, mushrooms, peppers and another handful of arugula. On the top roll spread with goat cheese. Pop the top on and enjoy!!

Dani, great recipe! Don't you love the simplicity and versatility of the Portabella mushroom? Great in any recipe to add a nice meaty texture.
