Ginger-Pecan Cranberry Sauce - VIDEO

There's a million and one different ways to throw a twist on traditional cranberry sauce.  This gingered-pecan version is hands down one of my favorite.

Ginger-Pecan Cranberry Sauce - VIDEO

Ingredients

12 oz. bag of cranberries, rinsed
1 cup of fresh o.j.
The zest of 1 orange (1 1/2 tsp.)
2 tsp. of grated ginger
½ cup of honey
2 tbsp. of brown sugar
¼ cup of toasted, chopped pecans

Directions

Combine orange juice, one tsp. of orange zest, ginger and brown sugar in a medium saucepan.  Bring to a boil.     

Stir in cranberries and honey and allow everything to come back to a boil. Reduce heat and allow to simmer for about 10 minutes.  You're looking for the cranberries to pop open and for the sauce to thicken.       

Stir in pecans and top with remaining zest.  Pop it all in the fridge until you're ready to serve!

Serves 6.

Can you believe that I had never made cranberry sauce from scratch until last year? My grandmother always made it fresh for the holidays and I always liked the canned jellied cranberry sauce so I never bothered to make it myself. I never realized how easy it is! I bet this one is really great with the orange zest and ginger! Plus I like that you used honey and brown sugar! Maybe I'll give it a try to put on my turkey sandwiches.

Hi Dani - there is no way I can get fresh cranberries for this recipe. Do you think semi-dried ones would suffice?

Peita - Dried cranberries will work but they will be sweeter, so you may want to cut back on the sugar just a bit:).
