Blue Cheese dressing is definitely at the top on my list when it comes to salad dressings. Actually, my favorite way to eat a salad is doused with vinegar and dipped into a side of blue cheese dressing... yum!

I'm not a fan of buying pre-made "low-fat" dressings from the grocery store because most of them are filled with ingredients that I can't pronounce (and honestly they don't even taste very good either)! So I set out to create a rich and creamy blue cheese dressing that would have all the qualities that I love with out all the saturated fat or impossible to pronounce ingredients!

Thanks to No-Fat Greek yogurt (one of my all time favorite ingredients!) this was a pretty easy task to accomplish. But let me tell you, the key to accomplishing a D'LISHES lower fat blue cheese dressing is the blue cheese!

Sure we can swap out the mayo and work around an the sour cream, but the only way to accomplish the yummy flavor of the blue cheese is to incorporate some real blue cheese!

The great thing about rich, high fat ingredients is that they usually carry a lot of texture and flavor, so a little goes a long way. This is why I never build my recipes around fat. I'd rather save the fat for the finishing touches. Finishing your dishes with fat is the best way to incorporate the textures and flavors you are looking for without adding an excess of un-needed calories. It's a win-win.

By adding just a couple of tablespoons of real blue cheese to this dressing, I was able to really capture the flavors and textures that I love so much.
In other words, by sticking to real, whole, unprocessed foods we were still able to create a much lighter blue cheese dressing that doesn't lack an ounce of flavor AND we can pronounce all the ingredients!

This dressing is great for salads and dipping veggies BUT what really inspired me to make it was the Super Bowl (yeah, I know I'm about a month late).  Stay tuned, b/c my next video is a recipe that is the perfect compliment to this blue cheese dressing;).

Rich & Creamy Blue Cheese Dressing (without the fat!)

Ingredients

1 garlic clove, crushed
2 tsp minced shallot
1 tbsp. of red wine vinegar
1 tsp. of Worchestire
2/3 cup of plain no fat Greek yogurt
2 tbsp of crumbled blue cheese
1 tbsp of skim milk
Salt and pepper

Directions

Combine all ingredients and enjoy!

Makes 6 - 2tbsp. servings

2 tbsp of dressing: Calories: 30; Total Fat: 1g; Saturated Fat: 0.7g; Cholesterol: 4mg; Sodium: 60mg; Carbohydrate: 2.1g; Dietary Fiber: 0.81g; Sugars: 1.6g; Protein: 3.2g

Great recipe. I can't wait to try it! Low fat salad dressing that still has actual cheese in it. Who knew?

I just tried a blue cheese dip for the first time and it was so good. Blue cheese is one of my new favorite foods.

I WILL make this. I love my blue cheese dressing!
