Baked Salmon with Dill

Baked Salmon with Dill

Four words:  SO GOOD, SO EASY!

I'm telling you guys, if you are looking for quick, healthy, weeknight food you HAVE TO add some fish to the menu.  I topped some wild salmon with a teaspoon of olive oil, dill, and salt and pepper and twelve minutes later, it was done!  DONE!

I love the combination of salmon and dill which is probably why the few salmon recipes that I have posted are with dill:).

Remember, wild salmon is packed with Omega-3's (the good fats), so it is a great addition to a nutritious kitchen!

I served this with my Cabbage with Dill and Peas and would definitely reccomend this quick combo the next time your looking for a weeknight meal.

Baked Salmon with Dill

Ingredients

2 5oz. salmon fillets
2 tsp chopped dill
2 tsp extra virgin olive oil
Salt and pepper to taste

Directions

Preheat oven to 375.

Place salmon on a baking sheet.  Combine dill and oilve oil in a small bowl and rub over each salmon fillet.  Sprinkle with a little salt and pepper and pop in the oven for 12-15 minutes.  Enjoy!

Serves 2.
