Quick Cod over Kale - VIDEO
Dark greens are hands down one of the most nutrient packed ingredients you can add to you're meal (not to mention they're absolutely delicious)!
For this QuickBite, I cook up a simple piece of cod fish to top off a big pile of kale sautéed with raisins and pine nuts.
Now as you'll see, after cooking up the kale I add my pine nuts and raisins, but I have to say, after filming this video I realized that by adding the pine nuts and raisins in with the garlic, it really helps to bring out their flavor a bit more, making this dish even more delicious. Either way you can't go wrong, so by all means, experiment a bit to see which you prefer!!
Quick Cod over Kale - VIDEO
Ingredients
3 tbsp. raisins
2 tbsp. toasted pine nuts
¼ of chicken broth
3 cloves of garlic, chopped
1 bunch of kale, stemmed and chopped
½ lb of cod fillets
1 tbsp extra virgin olive oil
salt and pepper to taste
Serve with lemon wedges.
Directions
Kale
Heat 1 tsp of olive oil in a medium saucepan over medium high heat. Add garlic and sauté for a couple of minutes or until fragrant.
Stir in kale, salt, pepper, and chicken broth. Cover and allow to cook for five to ten minutes or until the kale is wilted doen and tender. Remove the lid and stir in raisins and pine nuts.
Cod
Brush cod lightly with olive oil and season with salt and pepper.
Heat 1 tsp olive oil in a large sauté pan over medium high heat. Add cod, skin side up and cook three to four minutes per side, or until opaque and cooked thru. Serve cod over kale and enjoy!
