Shrimp Scampi over Garlic Spinach - VIDEO

Shrimp Scampi is a perfect example of a recipe that seems like it would be tricky to make, but in fact it's just the opposite.  It's so quick and simple! 

My only advice for this recipe is to be sure you have all your ingredients prepped ahead of time, because once you start cooking, it all comes together really fast.

*Update - Since the shooting this video, I've made this recipe many times using a lot less oil so I adjusted the written recipe.  I figure why add the extra oil if it doesn't really need it, you know what I mean??

Shrimp Scampi over Garlic Spinach - VIDEO

Ingredients

1 lb. shrimp, peeled and deveined
10 cloves garlic, chopped
1 Tbsp extra virgin olive oil
1/4 cup white wine
Juice of 1 lemon
Pinch of red pepper flakes
Handful of parsley, chopped

1 lb. spinach
5 cloves garlic, chopped
1 tsp. extra virgin olive oil
Pinch of red pepper flakes
Salt and pepper to taste

Serves 4.

Directions

Shrimp Scampi

Heat 3 tbsp. of olive oil in a large pan over medium heat and add chopped garlic. Cook for about 2 minutes or until garlic is really fragrant and nice and tender.

Add a pinch of red pepper flakes then toss in your shrimp. Season with salt and pepper.

Stir in white wine and lemon juice, then cook about 4-5 minutes or until the shrimp is opaque and cooked through. Remove from heat and top with fresh chopped parsley.

Garlic Spinach

Heat about 1 tbsp. of olive oil in a large saute pan over medium high heat. Add garlic and a pinch of red pepper flakes and saute for about 1-2 minutes or until garlic is fragrant and tender.

Toss in spinach with some salt and pepper and cover for 2 minutes. Take a peek and give it a quick stir. Allow for it to finish cooking with the lid off. Serve Shrimp Scampi over a bed of Garlic Spinach and you're ready to eat!

Was this ever good!! And did I ever feel spiffy saying what was I making - "Shrimp Scampi over Garlic Spinach" - sounds like something at a fancy restaurant, not something I would normally make it my kitchen!

Krista - I know what you mean...it sounds like it should be a lot harde to make than it is;).
