Simply Seared Tuna w/ Triple Herb Sauce

Yum to the yum to the yum, yum, yum!!! All I have to say is; SO GOOD - SO EASY!!

Okay, okay, so I know I can be a bit of a broken record, but what can I say this type of food really excites me...clean, simple, and d'lishes!! (By the way did you guys notice that I changed my header a bit...I changed "quick" to "clean" because I think it is more aligned with my style in the kitchen).

I don't know what it is about recipes like this...I think it just makes me really happy to know that there really are ways to prepare simple, nutritious, food that tastes GREAT, anyday of the week.

This recipe comes together so fast. Since the tuna cooks up in minutes, I like to make the sauce first, which by the way is great on just about any type of protein (fish, chicken, eggs, or beef). I was able to lighten the sauce up a bit by cutting back on the oil and adding in a little broth (just like I did with my pesto). You'll have extra sauce, so get creative...oh, and if you come up with anything good to do with...do share;).

I served this dish over some cumin scented white beans with scallions and cilantro...I'll post that recipe in the next couple of days!

Ingredients

  • 2 - 6 ounce pieces of Ahi Tuna
  • ½ cup mint
  • ½ cup cilantro
  • ½ cup parsley
  • 1/3-cup scallions
  • ¼ cup walnuts
  • 1/2 jalapeno
  • Juice of a lime
  • 1/3 cup of chicken or veggie broth
  • 2 tbsp extra virgin olive oil, plus a little extra to rub on your tuna
  • A fat pinch of salt and some pepper
Serves 2 (but you will have extra sauce!)

Directions

Triple Herb Sauce

1.  Start by pulsing jalapeno and scallions in  a food processor until finely minced.  Add in mint, cilantro, parsley, scallions, and walnuts; pulse until finely chopped.

2.  Add lime juice, and broth, blend until paste begins to form.  Finish it off with olive oil and salt….yum!!!!

*You may need a little less or more broth, you’ll have to play.  Also, if you’re not crazy about spice, start with just a little jalapeno and then taste your way to the perfect spiciness!

 

Simply Seared Tuna

In a perfect world you would want to use a cast iron pan for this recipe, but I don’t own one.  I used a Calphalon one iodized pan and was perfectly happy with the results.

1. Heat pan over a medium high heat.  While you’re pan is heating up, rub your tuna steaks with olive oil and season one side with salt and pepper.

2. Once your pan is good and hot, add tuna to the pan and season the opposite side.  For medium rare tuna you’re only gonna need a minute or so on each side, so don’t go to far.  If you like you’re tuna more well done, then by all means, let it go a  little longer.  Flip and cook other side!

Plate tuna and top with Triple Herb Sauce…Enjoy!!

This looks soooo good! I make a similar sauce for tilapia with basil, shallots, lemon zest, and butter from a recipe that I got out of Buon Appetit magazine. The extra sauce is delicious if you mix it into rice. I used the same method to make cilantro-lime rice once. You can pretty much experiment with all kinds of flavors.
