Peanut Slaw - VIDEO
Coleslaw is one of my favorite sides to eat with any kind of sandwich. I especially love to pile it high on top of a sandwich... yum!!
Try serving this Peanut Slaw with my Tuna Burgers, they're a match made in heaven!
Peanut Slaw - VIDEO
Ingredients
1 Savoy cabbage, thinly sliced (about 8 cups)½ cup of chopped cilantro
1 small onion, thinly sliced into ½ moons
1 tsp of grated ginger
Juice of ½ a lime
2 tbsp. of rice vinegar
2 tbsp. of tamari
3 tbsp. of peanut oil
1 clove of garlic, crushed
4 scallions, sliced
¼ cup of roasted, salted peanuts
Salt and pepper to taste
Directions
* This slaw is best when eaten within 60 minutes of preperation.
Combine ginger, garlic, vinegar, tamari, lime juice, peanut oil, and scallions in a small bowl. Season with salt and pepper. Whisk and set aside.
Combine cabbage, onion, and cilantro in a large bowl. Pour dressing over cabbage and combine.
Top with peanuts and enjoy!!
Serves 6 as a side.

Dani, I took a stab at this recipe and was so delighted by the freshness and boldness of flavour! I made some small modifications (adding a hint agave nectar and toasted sesame oil). I also added some xlean ground chicken to make a complete meal. I was thinking that this vinaigrette with some brown rice noodles or soba noodles and maybe some ground turkey would make a fantastic PWO meal. As always, hats off for another goodie. Party in my mouth!!
