Spinach & White Bean Soup - VIDEO

Soup is a meal that I enjoy all year round. This recipe makes for a very light meal that works perfectly in the Spring or Summer and it comes together in about the same amount of time it would take you to open up a can and heat it up.

Try serving this with some grilled bread, brushed with a little extra virgin olive oil....yum! *If you wanted to make this soup vegetarian, simply swap the chicken broth for veggie broth.

Spinach & White Bean Soup - VIDEO

Ingredients

  • 1 onion, chopped
  • 8 cloves of garlic, chopped
  • 4 stalks of celery, sliced
  • 15 oz. can diced tomatoes
  • 2 15 oz. cans of cannellini beans, rinsed and drained
  • 4 cups of chicken broth
  • 2 cups of water
  • 1 lb. spinach leaves
  • 1/4 cup basil, sliced
  • 1 ½ Tbsp. extra virgin olive oil
  • Salt and pepper to taste
  • Garnish: top with parmesan cheese

Serves 6.

Directions

Heat olive oil in a large pot over medium high heat. Add your onions and saute for 2-3 minutes or until onions are becoming translucent.

Stir in celery and garlic with a pinch of salt and pepper and allow to cook another 4 minutes or until your veggies are tender. Add in tomatoes, give it a quick stir to bring everything together and allow to cook another two minutes.

Add beans, chicken broth and water and bring to a boil.

Once soup is at a boil stir in your spinach and basil. Give it one more hit of salt and pepper. Once your spinach wilts, which will happen very quickly, you are ready to eat! Serve yourself a bowl and top with grated parmesan cheese. Enjoy!

wow! this fits the bill. my huz, popcorn lover that he is, has been diagnosed with high BP that needs attention. so, "it's soup for him" and i have turned into the soup nazi. i was looking for a black bean recipe, but i think i'll adapt this one, or go out and buy the cannellis.

last night, i made a spinach, red pepper, cuke and avocado salad with an entree of spaghetti squash with red sauce that i doctored up with fresh veggies. i think he's still hungry! :)
