Braised Red Cabbage and Apples
Back to cabbage! Braised red cabbage is a pretty classic side dish, but it is not a dish that I ever ate growing up. As a matter of fact the first time I ever had this dish was at Houston's, they often serve it as a side dish topped with goat cheese (that's what gave me the idea).
It takes a while to cook but that time is largely unattended... really all you have to do is chop up some onions, apples and cabbage and get them cooking. Once everything gets going you just pop a lid on and go about your business.
Of all the varieties of cabbage out there, red cabbage is the most nutrient dense. All you have to do is look at it's deep rich color to know how nutritious it is... the whole "eat the rainbow" theory is true, the darker and more vibrant the color of your veggies, the better they are for you.
Red cabbage loves being paired with some type of hearty protein. I served this with a piece of grilled, organic grass-fed new york steak (I'll post that recipe later), but you could also do bison, buffalo, pork, or even salmon.

Braised Red Cabbage and Apples
Ingredients
1 small head of red cabbage2 cloves of garlic
1 small onion, chopped
2 green apples, chopped up
¼ cup balsamic vinegar
2 tbsp of honey
¼ cup of goat cheese
1 tbsp of butter
Salt and pepper to taste
Directions
Melt butter in a large sauté pan over medium high heat. Add onions and garlic and sauté about 6-8 minutes or until the onions are cooked down and browning a bit.
Stir in apples, cabbage, vinegar and honey. Combine everything and season with salt and pepper. Cover the pan and cook over a medium low heat for about 45 minutes or so, stirring occasionally.
When you are ready to serve your cabbage, top each serving with a tablespoon of crumbled goat cheese…enjoy!
